Fish and your health

sugarFISH is a sushi restaurant that proudly offers fish as a healthy source of protein.

By making sushi an everyday choice, we give Americans an opportunity to integrate more of it into their diets. The Japanese, who eat a diet rich in fish, have historically low rates of heart disease. Seafood contains nutritious fat, including omega 3.

Fish From Many Waters.
Our fish comes from all over the world (Japan, the South Pacific, Boston, and beyond). We get the best the market has to offer. Most of our fish is not farmed, though some is when we feel the quality is superior. (Most hamachi, for example, is farmed in Japan.)

Where It’s Cut.
We have a central warehouse where we receive all of our fish. In this location, under Chef Nozawa’s supervision, we cut the fish according to his exacting standards.

Mercury in Fish.
Recent disclosures of elevated mercury levels in some fish varieties have focused awareness on this issue. sugarFISH carefully monitors its seafood purchases for mercury, and includes in its menu many varieties that are mercury-free. Much of our fish is naturally low in mercury.

Tuna.
Chef Nozawa has chosen bigeye tuna for many years as he prefers its taste and quality over blue-fin tuna. It also is usually lower in mercury than blue-fin. Our independent testing of our tuna shows that it is significantly below the government guidelines for mercury levels.
